If you've holidayed or lived in the Caribbean, your fondest memories will be of incredible hospitality, warm sunshine, sea lapping at your feet and swaying palm trees. No wonder local people have such a laid back approach to life! For some visitors, however, an even more enduring memory is the local cooking.
Originally from Jamaica, I have lived in England for many years and enjoyed the cuisine of most regions of the world. However, Caribbean food remains my firm favourite, bringing back great memories of my parents' cooking, family gatherings and feast days. I always welcome the chance to share the experience of enjoying it.
Caribbean food is unique. Echoing the lifestyle, environment and history of our respective islands, it's a fusion of traditional local dishes with those of people who have settled there over hundreds of years: American Indians, French, Spanish, English, Portuguese, Dutch, Chinese and Indian.
Caribbean food makes use of our fabulous natural resources - the fish and seafood so abundant in our warm waters and the vegetables, spices and herbs which grow so well in our wonderful climate. It's hard to resist the seductive, spicy aromas and appearance of Caribbean food, and when you taste it - wow!
Caribbean people have always preferred to entertain in their homes rather than eating out. At Amirage we're carrying on this wonderful tradition, but we'll do all the hard work for you.
